Fresh Michigan Salad (Week of 7-20-23)

Fusilier Ingredients:

(Available on week of 7-20-23, availability may vary after this date)

  • (1) Romaine Lettuce
  • (Pint) Blueberries
  • (Pint) Cherries
  • (1) Red Raspberry Vinaigrette
  • (1 two-pack) Chicken Breasts
  • (1) bunch Scallions
  • (1) Cucumber

Other Ingredients:

  • Toasted Pecans (Optional)
  • Grape Tomatoes (Ours aren't quite ready yet, 7-20-23) (Optional)
  • Gorgonzola Cheese (Optional, or Substitute with your favorite cheese)

Instructions:

  1. Cook Chicken Breasts (How you like it: oven, frying pan, grill, air fryer, rotisserie).
  2. Chop 3 cups of Romaine, dice Cucumber, and slice the (quantity desired) grape tomatoes in half.
  3. Pit fresh Cherries and slice in half.
  4. Combine Romaine, Tomatoes, Cherries, Blueberries, Toasted Pecans (optional), Gorgonzola Cheese (optional), and cooked Chicken Breasts.
  5. Top with Fusilier's Red Raspberry Vinaigrette and toss together.
  6. Enjoy!

    Extra Idea: 
    Purchase an Italian Loaf from Zingerman's. Cut into cubes and roast in the oven with a splash of olive oil. (Optional to add Garlic Powder/Salt for flavoring) Roast at 350*F until your desired crunch and toasted coloring. You would then have delicious fresh toasted croutons to add to your dinner!

Zucchini Boats (Week of 7-20-23)

Fusilier Ingredients:

(Available on week of 7-20-23, availability may vary after this date)

  • (3-5) Yellow or Green Zucchini 
  • (1) Ground Beef Package
  • (1) Jar of Tomato Sauce
  • (1) bunch of White Onions
  • (1) Green Bell Pepper

Other Ingredients:

  • Oil of choice (Olive, vegetable, avocado, butter, etc)
  • Garlic Salt (optional)
  • Salt and Pepper (optional)
  • Your favorite shredded cheese. (Recommend Parmesan or a Colby Jack)

Instructions:

  1. Preheat the oven to 350*F.
  2. Dice up the onion and the pepper.
  3. Partially cook down the onions, pepper, and ground beef. (Leave some pink in the meat)
  4. Cut zucchini in half and scoop out center. 
  5. Set zucchini on baking sheet and brush with your oil of choice. Add a dash of garlic salt or regular salt and pepper (Seasonings optional)
  6. Take partially cooked meat, onion, and peppers and place into the zucchini boat.
  7. Spoon the tomato sauce over the meat, onions, and peppers inside the zucchini boat. Sprinkle desired amount and type of cheese on top of sauce.
  8. Place into oven and bake until meat is fully cooked and zucchini is fork tender.
  9. Enjoy!
